Hello, I am Amy and love to eat. I think about what I will cook for dinner when I get up in the morning. A lifelong gardener, writer and cook, I grew up in the American South where food is all about fat, salt and sugar. Raised in a family of foodies, I strive for semi healthy food. Lighter in fat, salt and sugar, but heavy on flavor. Fresh vegetables, herbs and spices flavor my food.

The spotted hound in my kitchen was Charles, a rescue racing Greyhound. He helped by holding the floor down while I cooked. I lost Charles to bone cancer, who I miss dearly and keep the blog name in his honor. I am still exploring Florida food, the Instant Pot and being recently diagnosed with high cholesterol the recipes are changing.
